Taco Salad
1 lb. Ground Beef
2 Tbls. Tobasco Sauce(or you may use envelope of taco seasoning)
1/2 tsp. Salt
Brown above ingredients together until beef is cooked well done.
Drain and Set this mixture aside and allow to cool slightly.
Then mix following ingredients together in a large salad bowl.

The Ground beef
1 can (15 oz.) Red Kidney Beans (drained)
Red Onion - chopped
Tomatoes (diced)
1/2 lb. Chedder Cheese (shredded)

When ready to serve,place portion over bed of lettuce, add "Thousand Island" (amount to your taste) cover with chopped "Taco Flavored Doritos"

Serve with French Bread and Iced Tea



SOS In the last letter I asked for a recipe for “SOS” (Sh__ on a Shingle). I got a couple of different versions. I’ll print a couple of them here in case any of you haven’t had it for awhile & have a craving for it!!! They were sent in by: Don Sass: Creamed Chipped Beef (L-52) Beef, dried, sliced, 7 pounds (Separate dried beef slices). Shortening melted, salad oil, or olive oil. 1 pound or 2 cups. (Sauté slices in melted shortening until edges begin to curl. Set aside.) Milk, nonfat, dry 3 pounds 4 oz. or 3 quarts. Water, warm - reconstitute milk. Heat to just below boiling. Butter or margarine, softened. Flour, wheat, general purpose, sifted. Pepper black. Combine butter or margarine with flour & pepper. Add to milk, stirring constantly. Cook 5 minutes until thick. Then add beef to sauce. Blend well. Serve over toast, or biscuits. Minced Beef (L-36) (Red Stuff) Beef patty mix, bulk or beef ground, thawed. 20 pounds. Onions, dry, chopped 2 pounds. Cook beef with onions in its own fat until it loses its pink color, stirring to break apart. Drain or skim off excess fat. Flour, wheat, general purpose, sifted. 7 1/2 cups. Sprinkle flour over beef; continue cooking until flour is absorbed. Tomatoes, canned, crushed. 2 1/4 gallons. Mace, ground , or nutmeg, ground (Optional) 1/2 oz. Salt 2 tbsp Pepper, Black 2 tsp Add tomatoes, mace or nutmeg, salt, & pepper. Stir well. Simmer 15 minutes. Minced beef may be served over toast, biscuits, rice, or pasta. Note!!! I’m assuming that the L-30 & L-36 must be the people to be served. RETURN TO QUARTERDECK
